Just Flour: Taking Time to Proof

Dear Fellow Bakers,

After much reflection, we've made the difficult decision to indefinitely pause Just Flour before our planned launch. This decision is borne of our deep commitment to doing right by the baking community we hoped to serve and the mill partners we've been connecting with.

We Need a Bit More Time to Preheat

As a family-run business, authentic relationships are our foundation—whether that's connecting bakers to their flour sources or supporting the mills who pour their craft into every bag. Our family dynamics are at the heart of how we operate, and we've undergone significant family changes this year that require our complete focus and care. We don't want to half-bake this venture when our attention needs to be elsewhere.

We Continue Feeding our Starter

While Just Flour is pausing, our passion for connecting serious home bakers with quality flour and supporting the mills who craft these exceptional products hasn't wavered. We are deeply committed to improving both the quality and accessibility of heritage grains and artisanal flour.

The problems we set out to solve–the lack of easily available unique flour options, the disconnect between bakers and their ingredient sources, and the need for transparency in our food system–still matter to us.

Looking Ahead

Thank you for following our journey and sharing your enthusiasm with us. Your interest and support during our proofing phase has helped us rise.

This pause gives us time to reimagine how we can best serve baker and flour producers in the future.

Keep baking, keep experimenting, and keep supporting small mills! We've put a list together for you below. The story of connecting bakers to exceptional flour continues, even if our chapter is pausing for now.

The longer sourdough proofs, the more complex and flavorful the bread. We hope this is the case for Just Flour as well.
